What’s the difference between Mutton and Lamb meat?

Though lamb and mutton are both domestic sheep, they are two distinct types of meat. The difference lies on their age. Since age greatly affects the tenderness and the flavor of the meat, knowing which is mutton and which is lamb is important for the anticipated taste.

  • Age – Lamb is meat from sheep one year old or younger while mutton is meat from sheep with ages ranging from two to three years old.
  • Texture – Mutton meat is chewier and drier as compared to lamb meat because it comes from sheep that’s older with more fiber, denser muscles and with more fat content. On the other hand, lamb meat is more tender and moister, and easier to chew.
  • Flavor – Since lamb meat comes from younger sheep, the flavor is milder because it has not developed much yet with time while mutton meat has a stronger gamey flavor or taste.
  • Color – Raw lamb meat has a lighter pink hue while mutton meat can often be found to be in a darker red color.
  • Smell – Raw lamb meat has a sweeter smell, like grass. Mutton meat, however, is more pungent and has a gamey scent.
  • Price – Lamb meat is more costly than mutton.
  • Preparation – Due to the difference in the texture and flavor of lamb and mutton, the preparation of dishes using these meat materials may vary to come up with good and delicious meals. Also, mutton is said to be best when either slow-cooked or braised while the softer lamb meat is used mostly in grilled or roasted dishes.

Looking back in American history, mutton was a frequently consumed meal. Even our founding fathers like George Washington ate the stuff. But as the years float into decades the meat is enjoyed regularly by less and less diners.
