What noodles does Pei Wei use? 

Pei Wei primarily uses two types of noodles in their dishes: Japanese Udon noodles and Chinese Lo Mein noodles. 

The Udon noodles are thick and chewy, while Lo Mein noodles are soft, egg-based noodles and are usually stir-fried depending on the order.

What kind of steak does Pei Wei use?

Pei Wei predominantly uses flank or skirt steak for their beef entrees. This is a lower-cost and thinner cut of steak. Of course, the flank steak also cooks quickly making it the ideal cut for a quick-serve restaurant. A couple specific dishes Pei Wei utilizes skirt steak is the Mongolian beef and steak fried rice.

The sourced for Pei Wei is not grass finished or organic. This helps keep the protein costs lower.

Does Pei Wei use MSG in food? 

Pei Wei has publicly stated they do not add MSG to food. But keep in mind that some food items naturally include MSG. These ingredients include:

• Soy sauce: Soy sauce is a fermented product made from soybeans, wheat, and salt. It is a naturally occurring source of MSG.
• Fish sauce: Fish sauce is made from fermented fish. It is also a naturally occurring source of MSG.
• Tomatoes: Tomatoes contain glutamate, which is the building block of MSG. When tomatoes are cooked, the glutamate breaks down into MSG.
• Mushrooms: Mushrooms also contain glutamate. When mushrooms are cooked, the glutamate breaks down into MSG.

In 2018, Pei Wei added cauliflower rice as an additional option to their steamed and fried rice. Customers can choose to have cauliflower rice, cauliflower fried rice, or zoodles which are basically zucchini noodles. The change was made as part of the chain’s Clean Label Brand Philosophy.
