The restaurant industry is subject to ever-shifting trends and evolving consumer preferences. The Sizzler has experienced its fair share of challenges with changing dining preferences. Notably recognized for its all-you-can-eat salad bar and flame-grilled steaks, Sizzler once boasted a widespread presence across the United States. However, recent years have witnessed a wave of closures that have prompted many to question the reasons behind the decline.

In this post, I’m sharing the updated menu prices at Sizzler in 2023. I also discuss the reasons so many locations have closed in recent years along with a turnaround plan with the goal of invigorating the restaurant chain once again.

What does the Salad Bar Include at Sizzler?

Sizzler’s salad bar is often considered one of the main attractions offering a wide array of fresh ingredients that allow customers to create their own customized salads. Here’s what you can expect at the salad bar at Sizzler.

1. Lettuces and Greens. Various types of lettuce such as iceberg, romaine, mixed greens, and spinach form the base of the salad. These provide a variety of textures and flavors.

2. Fresh Vegetables. A diverse selection of fresh vegetables is usually available, including tomatoes, cucumbers, bell peppers, carrots, red onions, broccoli, cauliflower, and more. These vegetables add color, crunch, and nutritional value to the salads.

3. Protein Additions. Sizzler often provides protein options like grilled chicken, shrimp, bacon bits, ham, and even hard-boiled eggs. These choices allow customers to add a protein element to their salads for added flavor and satiety.

4. Cheeses. You might find a range of cheeses like cheddar, mozzarella, and parmesan. Cheese adds creaminess and a salty note to the salads.

5. Croutons and Nuts. Croutons, sunflower seeds, almonds, and other nuts might be available as toppings, contributing to the texture and flavor variety.

6. Dressings. Sizzler typically offers a selection of salad dressings, both classic and more unique options. These can include ranch, Caesar, balsamic vinaigrette, blue cheese, Italian, honey mustard, and more. Dressings allow customers to customize the taste of their salads.

7. Breads and Rolls. In addition to the fresh ingredients, some Sizzler locations might provide bread rolls or other types of bread on the salad bar.

8. Soup. While not always a part of the salad bar, some Sizzler locations might include a soup station nearby. This allows customers to complement their salads with a hot bowl of soup.

9. Fruits. Depending on the location and season, you might find fresh fruits like strawberries, pineapple, and grapes to add a sweet and refreshing element to your salad.

Sizzler’s salad bar is often designed to offer a healthy and totally customizable meal option. Customers can choose the ingredients they want.

Why Have So Many Sizzler Locations Closed?

The Sizzler is a global brand.

According to the official Sizzler website there are more than 60 locations still operating in the United States. Most of these locations are on the West Coast and specifically California. Of course this is a big decline from the chains 270+ units during the restaurants hay days.

The closure of numerous Sizzler locations in recent years can be attributed to a combination of factors that have reshaped the restaurant industry landscape. One significant factor is the changing consumer preferences and dining habits. In an era where people are increasingly seeking healthier and more diverse dining options, Sizzler’s traditional all-you-can-eat buffet model and focus on steak and potatoes are not as appealing of an offering when the chain first opened. As consumers prioritize fresher ingredients, customizable menus, and international flavors, Sizzler’s offerings might appear limited and outdated to younger generations.

But Sizzler has taken some lumps that go beyond change consumer tastes. The pandemic forced Sizzler USA to temporarily close its restaurants’ dining rooms, which had a significant impact on their revenue. The company filed for Chapter 11 bankruptcy due to the economic consequences of Covid-19.

While the chain was already on the decline prior to the health crisis, the long-term indoor dining closures and the refusal of some landlords to provide rent relief, the company used the bankruptcy process to reduce its debt and renegotiate its leases.

In the case of a Sizzler location in Nampa ID, the cost of operating became “unsustainable” leading to its closure. The local co-owner mentioned that business conditions for many restaurants are extremely challenging, and they had to make a difficult decision based on economics.

Is Sizzler Making a Comeback? Could the chain ever return to growth? 

The management of Sizzler has an updated marketing strategy and approach they believe will bring back diners to their restaurants and help the chain return to growth. It’s too early to tell if this plan will work, but I haven’t seen any new units opening since the release in early 2023.

Remember that catchy jingle from the 1980s that had us humming along? “Sizzler is the one that brings us choices!” I don’t and I’m in but 40s, but the chain is bringing it back anyway. Sizzler is reaching deep into its marketing assets in an attempt to woo both its loyal diners and the next generation Sizzler fanatics.

TikTok-ing and Instagram-ing Their Way to the Younger Diners: Move over Instagram food snaps, because Sizzler is now serving hot content on TikTok. They’re shaking things up and reaching out to the younger foodies, making sure they get a taste of what Sizzler has to offer. This is all in an effort to reach younger and more multicultural audiences.

Classic Yet Contemporary Menu Items: At its heart, Sizzler remains that family-friendly steakhouse. But now, they’re adding a sprinkle of modernity. Imagine your classic burger, but with a twist of avocado and sriracha mayo. That’s the new Sizzler: rooted in tradition but with a touch of more modern flavors.

By concentrating on improving its core offerings, enhancing customer satisfaction, and selecting prime locations for its new outlets, Sizzler is positioning itself to regain its status as a prominent player in the casual dining scene. As the restaurant industry continues to evolve, Sizzler’s revival story will no doubt continue to capture our attention.

In contrast to its Australian operations, Collins Foods’ Sizzler venture in Asia displayed a notably different trajectory. This decision exemplifies the company’s willingness to explore alternative avenues for the brand’s success, acknowledging that its potential might be better harnessed in specific international markets.
