KIS…..Keep it simple. The Dawg in the Road food trailer is an idea and project that I have been working on for the last three years. My idea was to develop a trailer that was easy to tow and set up and operate but provided enough room and comfort to work both small and large events. This trailer utilizes propane to run a 3400 watt inverter generator. All internal food heating operations are electric which makes for a safe, trouble free, smokeless interior. Hot dogs and sausages are steamed and by utilizing our high pressure steamer we can offer steamed sandwiches (our pastrami is legend). Nachos provide an easy to make menu item that consistently satisfies our customers.
Small enough to tow easily with a half ton truck and it has a small footprint to make it easy to park and cuts down on vendors fees. Interior dimensions make it easy to operate by one person but plenty of room for another person as needed. With a ceiling height of 6’9” there is plenty of headroom and storage areas.
Windows, lighting and ventilation. A pay window, display window and serving window along with a large window on the back of the unit a small window on the door and a ventilation port and fan on the ceiling. All of the windows have screens. Custom LED lighting on the interior. Plenty of ventilation, light and a great look. The walls and ceiling are insulated.
Exterior highlights include all aluminum exterior with a custom wrap. A pop up serving tray under the front serving windows. Large piston operated covering for the serving area which offers rain protection and a place to hang signage. A sign placement area on both sides of the windows. Two Yamaha speakers mounted on the exterior of the unit. An exterior electrical plug in with interior switch. . Exterior hose connector for fresh water refill and a large capacity gray water drainage pipe located just under the edge of the trailer. The door is equipped with a deadbolt and standard lock and under the door is a fold away steel step into the trailer. There are four fold down stabilizers mounted at the corners of the trailer. Located on the tongue of the trailer is a diamond plate bolt down storage area for two 30 gallon propane tanks. There is a generator or pole hookup wire next to the trailer tongue which has a 2” receiver.
The interior walls and ceiling are covered with NSF approved FRP board. The floor is tile with rubber baseboards and a heavy duty shock mat is included. An 18” deep custom mounted stainless steel counter runs the length of the unit. There are overhead cabinets over the sinks and also under the sinks. There is a hand wash sink with mounted soap dispenser and three wash sinks. 110 volt quick recovery hot water heater. A 20 gallon fresh water holding tank and 25 gallon gray water holding tank are mounted under the cabinets. The electrical panel has six separate circuits with breakers and 110 volt electrical receptacles throughout the trailer. Large commercial size fire extinguisher is mounted on site.
Included equipment: Norpole 6 cu ft. sandwich prep unit with all trays, bins and shelves. Insignia chest freezer. Panasonic microwave. Two Inducto countertop induction cookers. A Round Up high temp steam injection unit. One Vollrath countertop full sized rethermalizer. One Vollrath countertop full sized food warmer with roll top cover. One quality meat slicing unit. One stainless steel removable prep table. A Casio cash register. A mounted Kenwood stereo with bluetooth and CD. All necessary utensils, pans and accessories needed to produce quality menu offerings.
I have been successful operating this trailer on a part time basis, typically three or four days a week. I utilize a couple of locations where there is a high percentage of folks looking for an affordable quick meal and on weekend I go to special events, breweries and catering. I could book every day of the week if I desired but I have decided to retire in the near future. This is a great chance for someone walk into a turnkey operation and start making money from day one.
It will make a perfect operation for a family and because it is safe and simple to operate you will have many less worries than with a normal food truck or trailer. I considered franchising the concept but it’s time for me to relax. I hope that some one on Cape Cod will step up and run with it. I am ready to train and offer 30 days of training and consultation to the next owner.
