When we rolled out Smokey Paws we wanted to do something different. The feature item was Smoked BBQ Pulled Pork on a Pretzel Bun. We offered four different BBQ Sauces to top the Smoked Pork. Another popular item was a Gourmet Grilled Cheese Sandwich made with Sharp Cheddar Cheese, Boursin Cheese and Roasted Red Pepper on Texas style Bread. For an additional fee you could have the Grilled Cheese made with BBQ Pulled Pork. A sandwich that was popular with our Vegetarian guests was a Chipotle Black Bean Burger with Sautéed Shitake Mushrooms and a Balsamic Reduction with Swiss Cheese. Our fan favorite sides were Bacon Cheddar Tater Tots topped with Green Onion and also Seasoned Curly Fries. We offered only one dessert but it was an option our patrons loved, Chocolate Beignets with a Raspberry Dipping Sauce. We had a rotating menu to help keep things fresh but these were our staple items.
Smokey Paws allows for a variety of cuisine but it would best serve as a Grill or Diner on Wheels. As most culinary professionals know, a flat top can be used for almost anything. Between cooking and sautéing, your options are almost limitless. You could prepare Philly Cheesesteak, Burgers, Sliders, Rueben’s and a hundred more sandwiches. It also lends itself to fast one dish Entrée style items. One of my favorite quick dishes is Grilled Sausage over Fried Potatoes with Pepper Gravy topped with Sautéed Peppers, Onions and Shredded Cheddar Cheese. All of this can be prepared inside of Smokey Paws. One of the hottest trends right now is Breakfast Foods available 24 hours a day. With the Flat Top and Two Full Size Fryers you could serve breakfast anywhere there is a crowd. The truck also features an electric hot table with three Full Size Holding Units. Items can be prepared in advance or par cooked and hot held. There is also a Cooler with a Top Loading Cold Table with Cutting Board. If breakfast is your desire you could offer omelets with 12 different ingredients.
Smokey Paws is a 2009 Diesel Workhorse but the interior was customized in the Fall of 2015. We ran the vehicle for one summer season and the Generator has only 188 Hours of use. Aside from the aforementioned equipment, Smokey Paws is also housed with two Work Tables, a Stand Up Freezer and Stand Up Cooler. It also has a 3 Compartment Sink and Hand Sink, both of which are run from an Instant Hot Water Heater. There are Locking Storage Cabinets above the sinks and Storage Shelves below the Work Tables and the Service Counter. There are two Liquid Propane Tanks. One feeds the Generator while the other feeds the Flat Top, Fryers and Hot Water Heater. There is an Ansul System in the Hood for the Flat Top and Fryers. The vehicle also has a Roof Fan. Although there is no Receiver, Smokey Paws has a Speaker System with Outdoor Brackets on the top of the vehicle. Also included is a Fold Down Exterior Guest Counter and a Fold Down Awning that has Interior Lights. This vehicle is located near Rochester, Michigan.
